Crafted from 85% cabernet sauvignon and usually balanced out with 15% of another variety which varies year to year, both grape varieties are harvested from vineyards in the high altitude Yatir Forest. Raised for 2 months in small French oak barrels, this lovely wine possesses a dark red, purple color, an aroma of ripe forest fruit and a touch of green bell pepper. Complemented by an easy astringency, Yatir Cabernet Sauvignon is a classic cab. It is full-bodied and complex with concentrated fruit character. Yatir Winery is an independent enterprise in Carmel. It is situated at the southern tip of the Judean Hills. Yatir was founded in 1997 at the Yatir Forest vineyards at 900 meters, and operates today under the winemaking direction of Eran Goldwasser. This area is known to be an ancient wine growing region. Archeologists discovered 180 ancient wine presses on the grounds of the winery.
