The Cabernet Sauvignon and Merlot grapes for this wine were sourced from the much warmer region of Paso Robles. The Cabernet Sauvignon grapes come from Meeker Vineyards which is grown in sandy loam soils while the Merlot comes from the Paso Ono Vineyard, both on the east side of Highway 101 in Paso Robles. Tolosa Cabernet Sauvignon was fermented in stainless steel tanks and aged for 18 months in small French oak barrels. It has a deep red cherry color with aromas cedar, rosemary, bay leaf and underlying notes of olallieberry. Enticing flavors of strawberry jam, black plum and fig with some graphite on the back pallet welcome the fine grain tannins that linger on the finish. This elegant and approachable Cabernet Sauvignon would pair well with a roast tenderloin.
