The Cabernet sauvignon and merlot grapes for this wine were sourced from the much warmer Paso Robles American Viticultural Area (AVA). The Cabernet sauvignon grapes come from Meeker Vineyards, which is grown in sandy loam soils, while the merlot is harvested from the Paso Ono Vineyard. Both vineyards are on the east side of Highway 101 in Paso Robles. Tolosa Cabernet Sauvignon was fermented in stainless steel and held for 18 months in small French oak barriques. It has a deep red cherry hue in the glass with aromas cedar, rosemary, bay leaf and underlying nuances of olallieberry. Enticing flavors of strawberry jam, black plum and fig with some graphite on the back palate mingle with the fine grain tannins that linger on the finish. This elegant and approachable cabernet sauvignon would work nicely with a roast tenderloin.
