One of two Cabernet Sauvignon wines produced by Caymus Vineyards, the Napa Valley Cabernet Sauvignon are made using a risky vineyard move known as hang time. The grapes are literally left to hang on the vine longer than usual. As they wait there late into autumn, at risk of being lost to an early winter frost, they develop extra flavor and tannin. Additional vine care techniques go a long way towards bringing Caymus fans a consistently excellent glass of wine that exhibits layers of fruit, cocoa and vanilla oak flavors, and pinpoint balance. Caymus Napa Valley Cabernet is rather approachable. It’s a reliable California classic.
