One of two Cabernet Sauvignon wines produced by Caymus Vineyards, the Napa Valley Cabernet Sauvignon are made using a risky vineyard move known as hang time. The grapes are literally left to hang on the vine longer than usual. As they wait there late into autumn, at risk of being lost to an early winter frost, they develop extra flavor and tannin.
