Ghee is something very critical in Indian cooking. It's essentially clarified butter, which is made from rich butter, that has been heated over a long period of time. The end goal is golden, and clear, fat. It's used in Indian homes for festivities and cooking alike. Virtually every Indian Grocery Store has it!
Ghee usually has a nutty flavor and it's perfect to use while cooking. It has a very high smoking point, compared to regular butter and most cooking oils as well. It's best to purchase Ghee that's been made from creamy butter. The better the quality of the butter, the better the Indian ghee will be! Some people even make Indian ghee at home! You can even store the ghee in a glass jar, at room temperature. You can also refrigerate which will last 4-5 months.
